Five Questions for Chef Mark Estee, owner of Carson City's 'The Union' and 'Cucina Lupo'

In this installment of Carson Now's Five Question series, where we get to know our community members in short-and-sweet interviews, with Chef Mark Estee, the owner of Carson City's The Union and Cucina Lupo, (along with Liberty Food and Wine Exchange in Reno and the Overland in Gardnerville), we discuss his love of cooking, advice for aspiring chefs and more.

1) What made you want to become a chef?

When I was young in 1980's, I loved cooking shows on PBS and cooking with my Dad on Sundays. I was fascinated with the process and the dishes and the flavors and techniques. I wanted to go to culinary school so bad, but it was not "cool" to be a chef way back then, so I was pushed away by family and friends who thought I was nuts. But, I am nuts so I ended up quitting normal college to follow my dreams, and here I am now haha!


2) Why did you choose Carson City for the Union and the new Cucina Lupo?

It kind of chose us. I was a little down after selling a few places in 2016 and some friends I ended up getting into The Union. Our team saw a great opportunity and we jumped at the chance. The landlord is an amazing businessman and supported our ideas. We got lucky for sure. After The Union, we took on The Overland, so we had a great feel for the clientele in the Carson Valley. Then as the team grew and Tommy and Nick joined ownership with us, we had a chance to take the space where Cucina Lupo is now. We really started to take The Union to brewery and gastropub, and this left us a no brainer for an upscale Italian joint.

3) What is your favorite type of food to cook? To eat?

I am a simple man. I love to cook for my youngest son, Enzo. He loves pasta and salad. I cook seasonally and shop at the restaurants and the Great Basin Food Coop (among other places). Simple roasted chicken and eggs of all kinds are my favorite, but I also like to eat and drink at other locally owned spots to support my neighbors.

4) What advice do you have for aspiring chefs?

Get in the business and work it! No matter what, get a job and see if you like the pace, the feel, the work and all the things you do not see on TV. This is an amazing career and can be so rewarding. The last 20 years, and especially in the last 3 or so, we have seen the industry address the challenges of all types of abuse: equality in the workplace and so many other things that make being a chef so much more balanced than it was when I came up. I advise any person looking at this career to reach out to others and ask them about their experiences, both good and bad. I know I spend a fair amount of time talking to others about this amazing job!

5) Do you have any plans for new restaurant expansions at this time?

ALWAYS!!!

Last week, a basketball game among rivals Douglas High and Carson High inspired more comradery than animosity as it raised money for the teens injured in the Nov. 9 rollover. Carson City Sheriff Ken Furlong has named Assistant Sheriff Kenny L. Sandage to be appointed to the position of Undersheriff in December.

Mr. Sandage will assume the duties and responsibilities vacated by retiring Undersheriff Steve Albertsen. Ken Sandage, a decorated 26 year veteran with the Sheriff’s Office, has held the executive administrative position of Assistant Sheriff since August 22, 2014.

The Carson City Sheriff’s Office reports Monday that a tricycle that was stolen earlier this month from a handicapped man who used it as his only mode of transportation was recovered in Carson City by a member of the community.

A 35-year-old man was arrested Saturday for suspicion of felony home invasion after allegedly breaking into a home and helping himself to food in the kitchen, a Carson City sheriff’s deputy said.

Carson City School District becomes the latest participant in an energy-awareness and savings program called powerED. McKinstry, an energy and facility services expert, will administer the two-year educational-focused program.

UPDATE 1:04AM: A standoff with Carson City Sheriff's Office deputies at an Etta Place residence in which a man threatened to "go out in a blaze of glory" and shoot officers ended safely just before 12:30 a.m., said Carson City Sheriff Ken Furlong.

This month's cooking class includes cooking with quinoa

Dayton, Nevada– The public is warmly invited to join dietitian Kim Mason and chef Cynthia Kroon for a healthy cooking demonstration, followed by dinner, on Monday November 20, 2017 at 5:30pm at the Dayton Valley Community Center at 170 Pike Street. The class is completely free, no need to register, and everyone is welcome.

Organized by Junior Ramirez, a member of Carson Futbol Club, soccer players from around the region gathered Saturday at Carson High School for a tournament to benefit students injured in the Nov. 9 vehicle crash on Kings Canyon Road. It was the second tournament fundraiser.

UPDATE 2:03PM: A mechanical issue is likely to blame for a presence of light smoke inside a Carson Tahoe Hospital care facility on North Minnesota Street, according to Carson City Fire Department Battalion Chief Dan Shirey. All those evacuated are now allowed back into the facility.

The Capital City Arts Initiative announces its exhibition, "Inside and Outside the Lines", with artwork by artists Jonathan Farber and Susan Kotler at the city’s Sierra Room located in the Carson City Community Center, 851 E William Street, Carson City.

The Capital Community Band, under the direction of Richard Doede, will tie a big red bow around 2017 by presenting a Patriotic and Holiday concert on Sunday, Dec. 3, 2017. The free concert will be presented in the Bob Boldrick Theatre in the Carson Community Center.

Tahoe Douglas Fire Protection District christened Marine 24 earlier this month, giving Lake Tahoe its first year-round firefighting boat. At a cost of nearly $500,000, the vessel is able to fight fires from on board as well as piping water from the lake into water tenders.

The third annual Carson High School vs. Douglas High School Charity Basketball Game lit up CHS Wednesday, Nov. 15 and, as rivalry was put aside, it turned out to be the most successful basketball game fundraiser in CHS history with $10,000 raised for the seven students injured in the Nov. 9 vehicle accident on Kings Canyon Road.

Early Christmas shoppers seeking out the region's best deals on locally made holiday-themed crafts looked no further Friday and Saturday than Carson High School for the annual Holiday Craft Fair.

Carson City fire and sheriff's departments, Nevada Highway Patrol, East Fork Fire and Douglas County Sheriff's Office were called Saturday night to a vehicle crash in the southbound lane of Highway 395 and Topsy Lane.

Looking at a 5 p.m. Monday deadline the Brewery Arts Center is hoping for a big Carson City weekend push as it has lost some voter footing in its efforts to bring back the 10-week live outdoor music series it has hosted for two summers.

Two were arrested early Saturday morning for suspicion of meth possession and possession with intent to sell, a Carson City sheriff’s deputy said.
