Fox Brewpub in downtown Carson City to offer wide selection of craft beer brewed on site
Carson City’s burgeoning craft beer game is getting a bit stronger with The Fox Brewpub throwing its hops in the ring in Downtown Carson City.
The Fox Brewpub, formerly known as The Firkin and Fox has been in operation for over a decade now, and left its previous name and franchise agreement behind last year to go at it independently.
The Owner, Jim Phalan, is using some of this new found independence to build-out and operate a full craft brewery within the establishment — it’s the first run of brews to be available by Feb. 17.
"I would like to give a special thanks to Crag and Cindy Clark," said Phalan. "They have been backers of the brewery project since day one and without them and their support none of this could have happened."
Brewmaster Tim Mason, with Occidental Brewing Company, is helping get the opposition on its feet. He will be brewing the initial line-up of our beers, Phalan said.
The first in-house creation with a working title of, “NV ’64” is a Honey Blonde Ale named in homage to Nevada’s birth year of 1864. Phalan said they will first be focusing upon the “big three,” as he put it — the most popular styles of beer at The Fox Brewpub.
Along with the Honey Blonde Ale will be the Hop Tahoe IPA (India Pale Ale), and the Seamus O’Foalain Irish Red Ale.
In addition, The Fox Brewpub brewery will be launching with a Chocolate Stout called, El Guacho, with Patagonian malt and Ecuadorian cocoa nibs. Also in the works is a chili blonde, and an apricot blonde ale.
“I’m hoping everybody is going to like our craft beer,” said Phalan. “We are hopefully making something for everyone.”
Phalan said that they are hoping to create a nice and well-rounded selection of craft-driven beers, along with keeping about half of their taps open to popular commercial beers and a few handles will be open to other local craft breweries.
“I don’t currently plan on doing any distribution,” said Phalan. “Right now all of our beer will only be available here at the restaurant.”
The market is very saturated, he explained. “It’s a war to get shelf space at the supermarket. If the demand is there we will give distribution a hard look down the road,” said Phalan. “I think for us, just having our own little brewery here is just fine.”
Customers can take beer home by purchasing a growler on site or they can bring in their own for a fill. Also available are “Crowlers.” This is a new and convenient way to can beers on-demand. The beer will hold for longer in the can and customers receive a discount when they purchase three, 24 oz. cans, or “Crowlers.”
“The city has been really good to us. My landlords and Lopiccolo Construction have been fantastic to work with, and taxation has been great,” said Phalan. “We are very fortunate to work in such a close and tight-knit community.”
The Fox Brewpub is open daily from 11 a.m., and customers can expect the freshly brewed beers to be tapped by Feb. 17th.
